Our Story
Welcome to the Family
Edwin Coe Spirits is 100% family-owned, operated, and inspired. Our story starts back in the Prohibition era with Joe’s great-grandfather—the legendary Louisiana bootlegger, Coe Dupuis. Today, we carry on his legacy right here in Churubusco, Indiana. Our flagship spirit, Old Coe, is even crafted from his original whiskey recipe. As Coe used to say, "It just tastes like more."
True Grain-to-Glass Craft
We don’t take shortcuts. While many distilleries buy their base spirits elsewhere, we do every single bit of the heavy lifting right here under our roof. From mashing and fermentation to distilling, aging, and even hand-labeling every bottle—it’s all us.
Our lineup includes:
The Classics: Smooth Vodka, delicate Soft Gin, and clear Rum.
The Bold: Exceptional Old Coe , robust High Rye Bourbon, and exquisite Barrel Aged Rum.
The Rare: Keep a lookout for our seasonal and new releases.
The Cocktail Room & Patio
Our cocktails are built from the ground up using fresh, seasonal ingredients and house-made syrups we whip up from scratch every week.
The Vibe: Inside, our spacious cocktail bar is a 21+ sanctuary with open views of the copper stills.
The View: Looking for a family-friendly spot? Head out to our back patio. It’s open to all ages and overlooks a peaceful country landscape—the perfect place to slow down.
The Weekend: Join us Friday and Saturday nights for the "clink" of glasses, tasty local eats, and the soulful sounds of live music.

Joe is the heart and soul behind Edwin Coe. As our Founder and Master Distiller, he’s the one making sure every bottle is just right. He’s been at the stills since 2012, and honestly? He loves the craft even more today than when he started. Whether he’s balancing the books or perfecting a new mash bill, Joe’s thumbprint is on everything we pour.
Favorite Spirit: Rye Old Coe
Favorite Cocktails: Rye Old Coe Whiskey Sour
When she isn’t busy treating patients as a Doctor of Physical Therapy, Kristin is the driving force behind the Edwin Coe guest experience. She handles everything from event planning to staff magic, all while dreaming up our latest seasonal sips. For Kristin, it’s all about creating a space where the community can gather, relax, and enjoy a perfectly crafted cocktail.
Favorite Spirits: Anything Aged & Soft Gin
Favorite Cocktails: Sazerac & Bees Knees
Edwin Coe Spirits is more than just a brand; it’s a family legacy in the making. Joe and Kristin lead the charge (along with their three kids!), but it’s their amazing extended family—parents and siblings alike—who provide the support that makes it all possible. When you visit us, you’re stepping into a space built by the hands and hearts of the whole crew.
