Our Story
Edwin Coe Spirits is a grain-to-glass artisan distillery located in Churubusco, Indiana, that operates as a production facility, cocktail bar, and events venue. We craft an array of premium spirits, including an exceptional Sour Mash, a robust Rye, a delectable Honey blend, exquisite Barrel Aged Rum, a classic clear Rum, a delicate Soft Gin, and a smooth Vodka. Unlike many distilleries that purchase neutral grain liquor, all of Edwin Coe’s spirits are made completely in-house at our facility—-from milling grain, fermenting, distilling, aging, blending, bottling, and hand-labeling each product. Our craft cocktails are made with seasonal, fresh ingredients that incorporate house syrups and mixers we make from scratch weekly.
You can look forward to an experience that not only tantalizes your palate but also entertains your spirit. Friday and Saturday evenings come alive with the clink of cocktail glasses, a curated menu of craft cocktails, and an assortment of appetizing food options, all accompanied by the soulful rhythms of live music that makes any visit unforgettable. Edwin Coe Spirits' atmosphere is one of a kind with spacious seating indoors for those over 21 years old, along with an all-ages back patio that overlooks a serene country landscape. With open views of the stills and production area, the distillery is a unique event venue for private parties, corporate gatherings, reunions, showers, rehearsal dinners, and wedding receptions.
Beyond the weekend revelries, we also offer a quieter but no less engaging visitation during the week. Stop by on Tuesdays and Wednesdays between 3-6pm to browse the bottle shop, where you can take a piece of the distillery's passion home with you. Whether you're a connoisseur of fine spirits or a novice to the spirits world just eager for a unique stop on your journey, Edwin Coe offers the perfect blend of leisure and luxury. Encounter the art of distillation, revel in convivial nights full of flavor and song, and immerse yourself in an experience that's anything but ordinary.
Edwin Coe Spirits is 100% family-owned and operated. Our founder and head distiller, Joe Collins, started the distillery in 2016, with the support of his family—including wife, Kristin, who manages the cocktail bar and events. Joe has family roots dating back to prohibition when his great-grandfather, the legendary Coe Dupuis, began bootlegging in Louisiana. The company’s name is a tribute to the late moonshiner, and his whiskey recipe was the inspiration for our flagship spirit, OLD COE. Here we work hard at everything we do, from crafting exceptional spirits and house-made cocktails to delivering personalized service to our guests. To quote Coe himself, "It just tastes like more."

“This week legendary moonshiner Edwin Coe Dupuis [Joseph Edwin Dupuis] died at the age of 96. His moonshine whiskey became legend in the Atchafalaya Basin of Louisiana. Philadelphia food critic Craig Laban met "Coe" recently and has an appreciation of a man that turned swamp water into liquid amber. (4:00)
