Our Story

 

Edwin Coe Spirits is a grain-to-glass artisan distillery located in Churubusco, Indiana, that operates as a production facility, cocktail bar, and events venue. Our distilled spirits include Old Coe Sour Mash, High Rye Bourbon, Rye Old Coe, Honey Old Coe, Maple Old Coe, Rum, Barrel Aged Rum, Soft Gin, & Vodka. Edwin Coe's bottle shop is open Tuesdays and Wednesdays, and the full distillery is open to the public for craft cocktails and dinner (by Fork & Fiddle food truck & kitchen) every Friday and Saturday.

Edwin Coe Spirits' atmosphere is one of a kind with spacious seating indoors for those over 21 years old, along with an all-ages back patio that overlooks country landscape. We host live music every Saturday from 6-9pm. With open views of the stills and production area, the distillery is a unique event venue for private parties, corporate gatherings, reunions, showers, rehearsal dinners, and wedding receptions.

The founder and head distiller, Joe Collins, started the distillery in 2016, with the support of his family, including wife, Kristin, who manages the cocktail bar and events. Joe has family roots dating back to prohibition when his great-grandfather, the legendary Coe Dupuis, began bootlegging. The company’s name is a tribute to the late moonshiner, and his whiskey recipe was the inspiration for our flagship spirit, OLD COE.

Edwin Coe Spirits is 100% family-owned and operated. We work hard at everything we do, from crafting exceptional spirits and house-made cocktails to delivering personalized service to our guests. To quote Coe himself, "It just tastes like more."

Joe is the Founder and Master Distiller at Edwin Coe. He spends his days overseeing the business and creating all of the spirits the distillery has to offer. He’s been distilling since 2012, and his passion for the craft has only grown over time.

Kristin is a Doctor of Physical Therapy. When she isn’t treating patients, she’s managing the cocktail room, staff, events, and entertainment. Kristin enjoys creating a warm and inviting atmosphere for guests to enjoy, along with setting the seasonal cocktail menu.

Joe and Kristin have three young children and an incredible extended family, including parents and siblings, whose support make Edwin Coe Spirits possible.
